Lukewarm Water - 1/2 cup
Maida - 250g / 2 cup
Milk Powder - 2 tbsp
Namak - taste hisab se
Baking Powder - 1/2 tsp
Oil - 2 tbsp

We’re splitting this Vada Bao recipe for you and your partner to cook up a storm in half the time. After all, a two-in-one dish is best paired with efforts made-by-two. And some chutney, of course!* Cooking time with better half: 30 minutes Chef 1: Ingredients: 1 ½ tsp instant yeast 2 tbsp sugar ½ cup lukewarm water 250gm / 2 cups Maida 2tbsp milk powder Salt to taste ½ tsp baking powder Oil 8 rectangles of parchment Procedure: Add 2tbsp sugar to half a bowl of warm water and mix it well. Add instant yeast to the water, give it a mix and let it proof for 5 minutes. Take a plate on which you can knead the dough for the baos. Add 250gm Maida, milk powder, salt to taste and baking powder. Time to get your hands dirty! Mix the dry ingredients well, add the yeast water and knead a soft dough. Add some more water while kneading it. Once you have managed to knead the dough, massage it with some oil. Some neck massage from Chef 2 wouldn’t hurt either. You’ve kneaded the dough, after all! Cut the dough into eight (depending on the quantity of Maida you have taken) equal parts, roll them into balls, cover them with a muslin cloth and let them rest for 2 minutes. They can rest. You can’t. Take a parchment sheet and cut it into 8 rectangles of 4-5 inches. Take a rolling pin and flatten the baos into an oblong shape. Brush it with some oil and fold it in half. Place the baos on the parchment rectangles, cover them with a muslin cloth and let them proof for 40-45 minutes. You can check on what Chef 2 is doing and grab some munchies to enjoy with the vada baos. Steam the baos over cold water. Once the water boils, turn the flame to medium and steam the baos for 15 minutes. Turn the flame off after 15 minutes and let the baos rest in the steamer for 5 more minutes. Later place them in a bowl and cover them to keep them warm. Pass it over to Chef 2 so that they can assemble the dish. Chef 2: Ingredients: Oil 1 tsp mustard seeds Curry leaves 1 tsp crushed ginger, garlic and chillies 5 potatoes Salt to taste ½ tsp turmeric 1 tsp lemon juice 2 tbsp coriander leaves 1 cup gram flour 2 tbsp rice flour Water Dry garlic chutney Green chutney Sweet chutney Procedure: Boil 5 potatoes, peel and mash them. Heat some oil in a pan and add mustard seed to it. See them dancing, add curry leaves; crushed ginger garlic and chillies to the pan and mix well. Add the boiled mashed potatoes to the mixture, stir well and voila! You have your vada mixture ready! Spread it on a plate to let it cool down. In a mixing bowl, add gram flour, rice flour, salt to taste and water. Make a flowing consistency batter out of it. Go back to the potato mixture, now. Sprinkle some coriander leaves, lemon juice and some love on it. Roll them into small balls while you rock n roll with your partner over some music. Dip them in the batter and fry them in medium hot oil. Almost done! Assembling Time! Take the baos that Chef 1 has made with love. Take the parchment paper off them, apply the sweet chutney to the lower side of the bao, the green chutney on the other side, sprinkle some dry garlic chutney on it and add three vada balls to it.
